The following dish is a great summer meal. If your vegan leave out the tuna. Millet is a wonderful grain. Personally I loved the smell of it cooking. It was earthy and sweet. Millet is gluten free,, high in protein , iron , and fiber. It’s anti-fungal so would be good for someone on a candida diet. It supports the stomach and kidneys so it is great for improving breath and is soothing for tummy troubles and morning sickness.
Easy Summer Millet salad with Avocado & Tomato
2 large tomatoes-diced
1 Avocado- cut into chunks
1 onion – diced
2 garlic cloves- minced
1 Tablespoon of ginger – grated
handful of fresh basil or dried (about 2 tsp dried)
1 1/2 cup of millet
3 cups of water or vegetable broth
2 cans of tuna (better yet fresh steamed if you can get it)
juice from one lemon
sea salt to taste
1. Rinse Millet in a strainer (don’t skip this step. It really isn’t that hard.)
2. place millet and water/broth in a pan and bring to a boil. With lid on reduce to low and let simmer for 30 mins.
3. while the millet is cooking if you haven’t already, chop the rest of the ingredients and mix in a bowl together.
4. When millet is done you can either mix the bowl of chopped veggies into the millet or serve on top.
This salad tastes great chilled. If making it ahead wait till your ready to serve to add the avacado.
