It’s summer who wants to heat up the kitchen? Here’s a quick and easy grilled lime chicken that you can have as it is with your favorite sides or shred and use as taco filling.
Grilled Lime Chicken
What you need:
4 Chicken breast-boneless
4 Limes (cut into quarters)
3 Garlic cloves-smashed
4 Thai green chilies (if you can’t find these use what you like and use more or less to your taste)
2 Tablespoons olive oil
What you do:
1. place your chicken in a baking dish or your favorite marinating dish.
2. In a food processor put the limes, garlic, chilies, and olive oil and process till you get a nice sauce. It shouldn’t be perfectly smooth but if it’s to chunky add more olive oil or lime juice if you have it on hand. Water works fine too.
3. Pour marinade over chicken, mix around and let sit for 30 mins.
4. Grill on medium high 6 minutes a side or until done.
