Is there anything better than a fresh out of the oven muffin with a cup of coffee or tea in the morning? Ok maybe if you had a side of bacon with it my boys would say.
Here’s a really delish pumpkin muffin recipe that can start any fall day off right.
2 cups of Bob’s Red Mill 100% Whole Wheat Pastry Flour
2 tsp baking powder
1/4 tsp baking soda
3/4 tsp ground cinnamon
1/8 tsp allspice
1/8 tsp ground cloves
1/2 tsp salt
1 stick organic butter, melt and cool
3/4 cup brown sugar
1 cup canned organic pure pumpkin
1/4 cup milk
2 large organic eggs
1 tsp pure vanilla extract
3 Tbls pumpkin seeds (pepitas) + more for topping
1/4 Cup of raisins
1.Preheat your oven to 400. Butter muffin pan or use liners.
2.soak the raisins for 5 mins hot water then drain.
3. In a large bowl put your flour, baking powder and soda, spices and salt, Whisk together.
4.In another smaller bowl mix together butter, sugar, eggs, milk, pumpkin and vanilla.
5. Add wet ingredients to dry ingredients along with pepitas and raisins and stir together until combined.
6. Divide into your muffin tin and then sprinkle the tops of each muffin with a few more pepitas each.
7. Bake for 20 mins. Remove from oven and allow to cool. Enjoy warm or store in an airtight container.
