Chorizo Leeks

I am continuing this week with my favorite things to eat that help you detox in the spring. Leeks. While you can find these year round, because they are shoot, they are a good green spring choice. Anything that is a sprout, shoot, or seed is a great spring food.

I came across Leeks Fettuccine in a copy of “French Women Don’t Get Fat”.  In that book there is also a recipe for a magical soup made of just leeks. The soup is said to reset your metabolism over the course of a weekend. I can see how that would work.

I liked the idea of a quick pasta dish with no red sauce. It was simple and while I felt it was pure “girl” food, my guys really like it. I’ve been making it for a few years. This year I decided to change it up. I was grabbing prosciutto when I saw a small package of diced chorizo. It just made sense to add it to my fettuccine at that moment. So home it came with me and into the pan it went. Adding color, and that unmistakable delicious aroma of smoky goodness.

  1. So I am sharing that recipe with you today. Serve alone or with a nice salad. Substitute the pasta for whatever pasta you like best. I think this would even be great in the fall with spaghetti squash instead of pasta.

After the recipe is a short video on why leeks are good for you and how I clean them. It’s not as hard as I have heard some people say. Besides to me they are worth a little extra work.

Chorizo Leeks Fettuccine

  • 1 4oz pkg of diced chorizo
  • 1 4ox. pkg of prosciutto (optional)
  • 1 pkg fettuccine
  • 4-5 large leeks, sliced and washed.
  • olive oil
  • parmesan cheese, grated

 

In a large pot bring water to a boil with a pinch of salt. Add your pasta and cook according to packages.

While pasta is cooking heat a few tablespoons of oil in a skillet. Add your sliced leeks and stir. Cook untill almost soft. At this point add in your diced chorizo. Cook untill the chorizo is slightly crispy and leeks are soft.

Drain your pasta, serve the leeks & chorizo mixture on top of pasta, then plate with a slice or two of prosciutto and some fresh parmesan and a sprinkle of pepper.
